This is so incredibly easy to make. You have no idea how simple this one is and how if you set your mind to it, you can create your very own style of panini that no one else has made. That is how I felt with this sandwich. I tweaked it and switched it up to the point that it was almost not even recognizable from the recipe. I mean, I even added sliced apples (I have also tried sliced pears before) and it was positively amazing!

Ingredients
1 1/2 cups chicken breast ( shredded, cooked )
1/2 cup coleslaw mix ( shredded )
1/4 cup Sweet Baby Ray’s barbeque sauce ( + 2 tablespoons )
1/2 cup gouda cheese ( shredded )
8 sliced bread ( sourdough )
Instructions
In a medium bowl combine chicken and coleslaw mix. Stir in the BBQ sauce and once combine mix in the shredded cheese.
Divide chicken mixture among four of the bread slices. Top with the remaining four slices of bread. Lightly coat the outsides of sandwich with cooking spray.
Preheat a panini grill (I used a George Foreman grill) and place sandwiches on the grill. Close lid and grill for 2-3 minutes or until sandwich is toasted and filling is heated through.
