My mother was the master of casseroles. If there were foods that she thought tasted good together on the same plate, chances are she put it into a casserole.
I never understood why back then, but now that I am a busy mom with extra mouths to feed, I clearly see the appeal. It’s fast, the clean up is simple, and they usually make a ton for a reasonable price.
There are so many things you can do with casserole too that you could have one every night and no two ever had to taste the same. She made an excellent pork chops and potato casserole whenever the meat would go on sale.
I wasn’t much of a fan of pork chops when it came to eating them plain, but in this casserole they were excellent. They were always super moist and the potatoes complimented the meat perfectly.
When I found this recipe on Recipe Lion for the same thing, I got the chance to make it for my family. We all loved it and the pan got cleared right out. Next time I may have to make two pans!
