There is nothing worse than going to the kitchen to make something to eat only to find that you are extremly low on groceries. That happens to me at least a couple of times a month.
I try and stick to two shopping trips a month because if I go every week, I spend more money than what I need to. So, on one such occasion when the cupboards were in fact bare, I decided to concoct my own special recipe.
I had some burger, some soup, a few potatoes, and of course there’s always dry pasta in the house somewhere. I tossed this little casserole together, not quite sure what was going to come of it. It actually came out really good!
I thought maybe that’s how I felt because I was hungry and I knew there weren’t any other options, but my husband and kids enjoyed it too. Now, I don’t even have to have empty cupboards to make this. It’s actually a normal meal at our dinner table these days.

Sounds good
Recipe is a good start, but it needs a bit of tweaking. For instance, maybe some salt and pepper. Maybe season the beef when you are cooking it? Perhaps a bit more cheese.
2cups of sour cream is that correct?
Can you use something other than sour cream? I just can’t make myself like it.
Maybe boost the amount of cream of mushroom soup to compensate for leaving out the sour cream? I wonder if there’s a way to use Greek yogurt instead?
Hello, This sounds good. But the picture shows green beans and no beans in the recipe. Would you add a whole can and is the 2 cups of sour cream correct? Thank you
