When I first came across this recipe I thought; “that sounds a bit strange”. I almost skipped it but something made me want to give it a try, after all.
All of my friends and family members have been totally in love with this pie! Who wouldn’t be? It’s so quick and easy, and you just can’t beat the lovely flavor. If you happen to have a lemon tree in the back yard, this is the perfect recipe to use up some of those refreshing fruits!
Ingredients
1 lemon (wash thoroughly)
4 Eggland’s eggs
1 1⁄2 cups Domino white sugar
1⁄2 cup Land O’ Lakes butter
1 unbaked pie shell
Instructions:
Preheat oven to 350 F.
Do not peel the lemon, just cut off the ends, then cut the lemon into eighths. Remove seeds.
Place the lemon slices in blender and pulse until liquefied.
Add the eggs, sugar and butter and blend until fully combined.
Pour the lemon mixture into prepared pie crust and bake 45 to 50 minutes.
