I pretty much always do my grocery shopping on Friday mornings. That’s when we get paid and I like to make sure that we have everything we need for the weekend because, who wants to shop on the weekend? Not me. By Thursday night, the cupboards are starting to look pretty sad. Usually, this is declared a leftover day and we just eat whatever we haven’t finished up throughout the week or have something easy like a boxed mac and cheese.
On this particular week, we didn’t have any of the above…no leftovers, no mac and cheese. We could have ordered a pizza but it was so cold outside nobody wanted to go anywhere. I started scouring for something simple and realistic and found this on Group Recipes.
It was so easy to make, I had everything I needed in the house, and it was done in just a few minutes. The true test came when it was served. My family scarfed it right down.
There weren’t even any leftovers! Since then, This has been my go-to meal. It saves money on take-out and helps us use up whatever we have in the fridge so we can start fresh again!
