About two weeks ago I decided I would need to start planning for a breakfast and lunch menu.
I work from home and sometimes my days get very busy. If I don’t have a meal plan, I just quickly grab something unhealthy or even skip the whole meal. Which means, by dinnertime I’m starving and eat like a horse. Not good, not good at all!
I want to get back on the healthy track so now I have been searching for breakfast and lunch recipes that are easy to make. I want to use basic ingredients so that I don’t have to go to the store every time I want to make lunch. I also prefer meals that can be prepared ahead.
This recipe ticked so many boxes that I immediately knew it was going to be my favorite! Plus, it looks very inviting, too. The best part is, I don’t have to spend an hour in the kitchen just to get some breakfast!
