Every mom wants to sneak in all kinds of healthy ingredients when it comes to dinner. I remember how my Mom had tried very hard to hide the vegetables in the dishes she prepared from my brother’s keen eyes. She sneaked spinach in cordon bleus, she added pumpkin in desserts, she uses oatmeal to bread pork or chicken—everything just to get healthy food in my brother’s system. She does the same to my niece now. My very picky niece who wants nothing but the sinful food.
My mother is more successful than my brother and his wife though, which is why they adapted her method. It isn’t really something tricky or scheming. She just allows my niece to watch her prepare the food so by the time it’s ending, my niece is drowning in all the wonderful smells. Also, my Mom always says that when the kids know what it is they’re going to eat, it’s most likely that they will eat it.
One of my niece’s favorite recipe of my Mom is her baked potato wedges. It’s cheesy and it smells so good that my niece eats about five to eight potatoes in one sitting! Check out this similar recipe over at The Southern Lady Cooks.
