My mom was a whiz in the kitchen. Back in the day, she made the best meals. Even though the food was amazing, it seemed like she only had about ten recipes that just got repeated over and over again. I guess she found things that worked for her and her family, and she wasn’t going to mess with it. I, on the other hand, like to play around a bit with the recipes that I have. One recipe that I took from my mom when I left the house was her meatloaf recipe.
When I made it for my husband early on in our marriage, he said “I knew there was a reason why I married you…” very funny. Anyways, we both loved it, but after we had kids, we had a hard time getting them to eat it. I knew I didn’t want to take meatloaf off the menu, so when I found these mini meatloaf cupcakes on Boulder Locavore, I figured I would give them a try.
I waited anxiously to see how my kids would react to them…and too my amazement, they really enjoyed them. My husband and I liked them too, so it looks like meatloaf is here to stay, only in a different version.
