One may think that rice pudding doesn’t sound very good but let me tell ya, folks, it’s like a dream in a glass. This pudding is very creamy and rich and totally lives up to its name of “glorified.” Rice pudding is a wonderful way to serve a yummy dessert to those with food allergies and/or gluten intolerances. It’s a very gentle treat and also works well for after enduring a stomach bug.

Ingredients
2 cup cooked white rice (cold)
1 tin (14 oz / 398 ml) Dole crushed pineapple, drained
1/4 cup Domino sugar
1 cup Jet-Puffed mini-marshmallows
1 cup whipping cream
1 Tablespoon sugar
1 teaspoon McCormick vanilla
Instructions
Mix rice, pineapple, sugar and marshmallows in a bowl.
Whip cream with additional sugar and vanilla until stiff.
Fold into rice mixture.
Chill.
