Traditional potato skins are one of my favorite appetizers of all time. Whenever we go out to dinner I like to sample what they have because they are always a little bit different…but always delicious. When I found this recipe for Mexican potato skins on Noshing With The Nolands, I was like What?!? I knew they would be amazing, but I didn’t know that they would be this good! I made them the first time for a traditional taco Tuesday appetizer.
I wanted to shake things up a bit and surprise my family with something new. Well they were surprised for sure! We ate every single last bite of these yummy things!
And we had so many, that we didn’t even get to the tacos! (That worked for me because then we just had taco Wednesday.) Now, I mix these in with our regular menu selections everyone once in a while and they always get eaten right up. They are also perfect to make for our social events at home.
