Our best friend’s recently invited us over for a visit. It was exciting, because we hadn’t seen them in over a month.
They had recently had twins, and weren’t really up for company. We decided that we weren’t going to be those people that showed up unannounced. We wanted them to get as much private family time with their new babies as they could before life got back to normal.
So, when we showed up and I could smell dinner going, I was shocked. I figured we would just order a pizza or something and keep things low key.
I couldn’t imagine that my girlfriend Jenna was ready to cook. When her husband brought this taco spaghetti casserole out to the table, I was in shock. “Who made this?” He said that he did, and that it was a really easy recipe.
I was a little unsure about what it would taste like, and much to my amazement, it was delicious. We enjoyed a nice visit, a yummy meal, and I walked out with a brand new recipe.

Quick Tip: Serve with sour cream and cilantro.
Doesn’t that boil out all the taco flavoring?
