I always feel that I live in one of the busiest households in the world. I have three children, all between the ages of 10 and 15, all that play sports during every season that they possibly can.
So, if you’re a mom like me, you know how hectic the week can be. One kid is going one way at one time, as soon as he or she gets picked up another one is going somewhere else.
The idea of us all sitting down to dinner together is unheard of. The idea of me having time to make dinner is almost as fictional. Except for when I find simple recipes like this Mexican casserole that I discovered on Group Recipes.
I can seriously toss this together in about ten minutes and after baking for 30, dinner is done. The beautiful thing about this dish is that it can be warmed up and it still tastes like it just came fresh out of the oven.
This is one of the most important meals at our house, not just because it’s fast, but because it’s so tasty!
