Albert is one of my cousins from Aunt Beth’s side. He’s one of my favorite cousins because he’s a true gentleman who respects all of his girl cousins. He has never pranked one of us and he’s always protecting us from the likes of our bully cousin Rob. I felt a bit sad when he left. We don’t see him a lot though because he lives overseas for work. His company assigned him to manage one of their branches there and he has been staying there for a few years now.
So whenever he comes home for a visit, Aunt Beth makes sure she spoils him and cooks him food that will always remind him of home. Just recently, he came home with his girlfriend whom he met there. His girlfriend was a bit shy, but was really friendly once she got over her shyness.
It was fun to watch Aunt Beth fuss over the couple (her husband was already hiding in shame) and feeding them with everything she could feed them with. One of the dishes that night was a roasted turkey that the couple seemed to really love.
Albert and his girlfriend looked so happy while eating it! We all loved it actually. And this recipe that I found over at She Wears Many Hats reminds me of that roasted turkey. Except this recipe uses mayonnaise, which makes the dish even tastier!
