Are you all about the chocolate cake? If so, give this Mississippi mud cake a whirl! It’s easy to make and tastes like a dream come true. Plus, this “cake” is far more like brownies in my opinion. You can eat them with your hands for crying out loud! I opted to leave the nuts out of mine due to my son’s severe tree nut allergy which is why you don’t see them in the picture. I feel the brownie cake still came out amazingly well.
I am definitely making this cake for my holiday spread this year. I think I’m going to have so many desserts that I’ll need a separate table to sit them on lol!
Ingredients
2 c Domino sugar
1 c margarine or Land O Lakes butter
2 T Toll House cocoa
4 Eggland’s Best eggs
1 1/2 cup Gold Medal flour
1 c Fisher walnuts
1 c Baker’s coconut
Middle:
7 oz. jar of Jet-Puffed marshmallow cream
Icing:
1 lb Domino powdered sugar
1/2 c margarine or Land O Lakes butter
1/2 c PET canned milk
1/2 c Hershey cocoa or less
1 t McCormick vanilla
Mix cake ingredients together and bake in 13×9 cake pan at 350* for 30 min.
Take from the oven, while hot, spread marshmallow cream on top.
Let cool then top with icing mixture.

Quick Tip: Always allow cake to completely cool before frosting to ensure that the icing doesn’t melt.
