If you’re looking for more treats to fill spaces on your holiday dessert table consider making these yummy buckeyes. I actually make these yummy peanut butter and chocolate treats all year round. In the summer, when the days are hot, you can freeze these yummy Buckeyes and enjoy them frozen! Talk about a cold treat when the mercury rises. My kids love to snack on these Buckeyes when they are frozen and think of them as ice cream haha!
Well, I’m no OSU fan but I gotta hand it to them, these Buckeyes are delicious!
Ingredients
1 1/2 C Jif creamy peanut butter
1/2 C Land O Lakes butter – room temperature
1 tsp McCormick vanilla
16 oz Domino Confectioners sugar
12 oz bag of Toll House semi sweet chocolate chips
3 Tbs Crisco
Instructions
Day 1 – Mix peanut butter, butter, vanilla and sugar with electric mixer till smooth. Roll tbls size amounts into balls, place on a cookie sheet lined with wax paper – refrigerate overnight.
Day 2 – Melt chocolate chips and Crisco together and mix until smooth. Stick a toothpick in each peanut butter ball and dip in the chocolate, leaving a semicircle of peanut butter showing at the top. Replace on wax paper and refrigerate for several hours until chocolate firms up a bit.
