My cousins and I, along with my siblings, were best friends growing up. We were lucky enough to live in a small town, and we could ride our bikes to each other’s houses…that’s how close together we lived. During the summer months, and at just about every break we got from school, we were always staying over at each others houses. I think our parents loved it because that meant they each got to take a break from having any kids at home on those days.
I always tried to stay at their house on Mexican Monday. My Uncle was amazing when it came to putting together all kinds of authentic Mexican dishes. One of my favorites was his chicken enchiladas. The recipe was just like this one from My Recipes.
He would serve it up with some refried beans and rice. It was so good…with all of us there he made a double batch so there was plenty to go around. Now that I have this recipe, I can make them for my family on our Mexican Monday! They are one of our favorites.
