I love my in-laws, don’t get me wrong. But they are infamous for showing up to our house unannounced, usually as we are sitting down to eat. They always say that they aren’t hungry, but I can’t stand eating in front of someone. That’s why I’m so glad that I found this recipe for Southern Style Buttermilk Biscuits on The Pioneer Woman. These are perhaps the easiest way to practically double a meal. Bread always is used as a filler, so when I’ve cooked for four, and two extra show up, I just toss a biscuit on the plate.
This way, everyone can have a taste of the main entree and nobody leaves the table hungry. We also use these when we are having biscuits and gravy.
Sometimes I will make a big batch and freeze them. Just a few minutes in the microwave and they are ready to go.
Now, I never worry about who is stopping by. I know I have a yummy biscuit waiting for them.
