There is a little restaurant down the street from my house, or there used to be, that made the best hashbrown casserole. Unfortunately, when the economy took a nose dive, people stopped going there and they had to close the doors. There are talks of them getting back in the game now, but in the meantime, I had to do something about getting that mouthwatering hashbrown casserole.
When I was looking online, I found a recipe on Spend With Pennies that appeared to be close to what they made. I decided to give it a try at home. Boy was I shocked!
This tasted exactly like the stuff from down the street…and it was so easy to make! We had it for a side to our brunch one Sunday morning, and now I make it all the time, even for dinner! My kids and husband just gobble it right up.
If that restaurant does get to open back up I’ll be sure to go and support them, but for now, these are my favorite hashbrowns!
