My hungry guy loves a nice big breakfast in the morning. He works hard and the best way to fuel up before a long shift is by getting all his nutrients in. A bowl of cereal or toast will do in a pinch, but it’s not what he really wants. That’s why I was so glad when I found this recipe on Group Recipes. It was a hearty breakfast that could be done in the time we had between waking and heading out the door.
The first time I made it, he was shocked to say the least, but very happy he had a real meal in the morning. When he came home that evening, he stated, “I didn’t get that mid-day tired feeling like I usually do. I think it was that casserole from this morning!”
That’s all I needed to hear. We will be having this many more mornings indeed!
