How To Turn a Few Simple Ingredients Into This Magnificent Pie

My family is huge on Mexican food.  We are Cuban so we love our Hispanic food, but Mexican is at a whole new level.  It is full of flavor, texture and combinations that I would not normally try, but are so delicious when inside a taco.  We have been to so many Mexican restaurants, from big chains to little mom and pop shops.  They all make wonderfully delicious tacos with a twist and we love to try all the new things they serve up daily.

With so many different options to enjoy, we are always looking for something new to try.  I mean, I am usually that person who is content with that one great thing on the menu and orders it over and over again, but my husband is always pushing me to try new things.  He tells me with so many good things to try, I have got to be willing to eat something different.

So recently I did and guess what? I found my new favorite item on the menu.  It is simple, yet looks so amazing and incorporates all of my favorite flavors into one amazing dish!  If you just keep your pantry stocked with the basic necessary items, you can have this at any time!
