On an unseasonably warm weekend a few weeks ago, all the neighbors started to come out of their houses and work on yard work, visit with one another, and just enjoy the weather. It was so nice, nobody wanted to go back inside.
Someone said, “How about we have dinner outside?” The response was an astounding “Yes!” from everyone. I, of course, being the planner that I am, thought, “What dinner?”
Mrs. Smith piped in and said she had the perfect recipe that she found on Spend with Pennies. “Give me an hour or so and I’ll be back.” She came back with this huge casserole pan, a basket of bread sticks, and a bowl of salad. We all dug right in.
The casserole was amazing! It was like spaghetti but it was also like lasagna…and there was plenty to go around. As the sun started to set and the weather got cooler, I was sure to steal this recipe from her.
I got to take it to a family potluck the following week and it was a huge hit! This is a new favorite of mine not only to eat, but also to make.
