Hidden Layers Of Coconut Turn This Cake Into A Dreamy Piece Of Heaven

Watching wrestling is my guilty pleasure. It’s sort of cathartic, isn’t it? I mean not that I am applying those moves to anyone; but cheering for your favorite wrestler (I am a John Cena fan!) and watching him defeat the other one somehow relieves you of stress. My boyfriend finds it amusing. Because whenever we watch it together, he just watches it silently and just cheers whenever there’s something special happens. However, I am different. I always cheer from start to finish most especially if it’s John Cena on the ring.

Just a couple of nights ago, I made us this simple coconut layered pound cake using a recipe I discovered just recently. I made it especially for the viewing night of one of John Cena’s matches. I didn’t even care who he was fighting anymore. I was just cheering for him from start to finish. He lost though. And that kind of broke my heart. My boyfriend was simply amused and told me the rest of the pound cake was his. It seemed I ate quite a lot because I was too stressed during the match. Oh well. Quick Tip: To toast nuts, bake in a shallow pan in a 350° oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.
