Hamburger stuffed cauliflower is a simple dish to make and perfect for people who are counting carbs.

I guess I was expecting more. I chopped up the leftovers into bite-sized pieces, added a buttload of shredded cheddar and warmed it in a nonstick skillet for dinner a couple of days later. I was more pleased with that version than the supposed stuffed cauliflower. It may be low carb but with all the cheese I added it was not low-calorie! But I finally liked the taste.
Oh, I don’t know, Audrey, I really liked this dish as is. However, your cheese idea certainly ups the flavor factor so thanks for that little tid bit 🙂
Ingredients
1 head cauliflower
1 teaspoon Morton salt
2# ground beef
2 eggs
1 teaspoon minced garlic
1 teaspoon McCormick oregano
1 teaspoon basil
1/2 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon cayenne or to taste
1/2 teaspoon salt
1/4 teaspoon black pepper
béchamel sauce:
2 tablespoons Kerrygold butter
2 tablespoon Gold Medal flour
2 1/2 cups milk
1/2 cup Kraft Parmesan; shredded
1 teaspoon salt
1/2 teaspoon black pepper
salt and pepper
Instructions
Preheat oven to 350°F.
Trim leaves and some of the stem of the cauliflower. Don’t remove much stem, you can trim it later after cooking. You’ll need it intact for cooking in one piece.
Place cauliflower in a large pot of boiling water with a teaspoon of salt. Boil for about 10 minutes, until it is just becoming fork tender. Any longer and the cauliflower will fall apart.
While the cauliflower cooks mix meat, eggs and seasonings in a separate bowl. Use a spoon or your hands until well blended.
Carefully remove cauliflower from pot and place in a baking dish. Place as much of the meat mixture as possible into the cauliflower. Place any remainder under the cauliflower.
Bake for 30 minutes. While the dish bakes melt the butter in a small skillet. Stir in the flour until it begins to brown. Add milk, salt and pepper and stir until the sauce thickens, about 5 minutes. Stir in the cheese until smooth. Set aside.
Remove baking dish from oven after 30 minutes and turn the broiler on high. Pour béchamel over the cauliflower and place dish under the broiler for several minutes until golden.
Remove from oven and serve.
