Last month, my daughter had her very last basketball game of the season. I wanted to make sure that we all had a nice homemade meal before we left to watch all the excitement go down. The few times that we have grabbed fast food on the way to her games, she always says that she doesn’t feel good with it jumping around inside of her stomach…it’s too heavy. I don’t blame her.
The last thing I want to do after eating a greasy hamburger is run around the basketball courts. So, when I was thinking of what I could do, I remembered Grandma’s ham and potato casserole. It was always a comforting dish and it was easy to make. I found a similar recipe on Spend with Pennies and decided that would be our game day food.
My daughter just loved it. They won their game and when they were done, she said that she felt great and energized through the entire play time. Now, I know what to make her next year!
