Ham And Cheese Rice Casserole – A Classic Dinner Option

Sometimes, us busy moms and dads just need a quick fix for weeknight dining. This yummy rice, ham, and cheese casserole is the key. I left instructions for this casserole for my 16-year-old daughter to make for dinner one time when I wasn’t going to be home and she did a fabulous job. You guys and gals are really going to love this keeper of a recipe. This dish is definitely quick!

You make the entire thing in the microwave. How easy is that?

 

Ingredients

3 c minute rice

1 can(s) Campbell’s cream of mushroom soup

1 can(s) cheddar cheese soup

12 oz can, PET evaporated milk

2 Tbsp instant minced onion

1 can(s) Green Giant green beans, undrained (optional)

12 oz Velveeta cheese, cubed

2 c ham, cubed

Instructions

Spray 3 quart microwave safe casserole with non-stick spray. Add Minute rice, instant minced onion, cream of mushroom, cheddar cheese soup and evaporated milk and mix together. Cover and microwave on full power for 10 minutes–stir at 5 minutes.

While this is cooking, cube the ham and Velveeta. When the 10 minutes is up, add the un-drained green beans, cubed ham and cubed Velveeta, stir. Cover and microwave on full power for 8 minutes, stirring at 4 minutes. Serve and enjoy!
