I have made my kids lunches for them ever since they started their first day of kindergarten. We have tried the hot lunch route, but they never seem to get anything they like. I liked it because it was easy, but it’s no use if they aren’t going to eat it. So back to peanut butter and jelly sandwiches we went. I just know that they have to get sick of them after a while. I know that I would! I started looking around for new lunch ideas, and I came across these chicken quesadillas on My Recipes.
It looked perfect for what we needed. I made them first at home for dinner and they were a huge hit. When I asked if they thought they might like them in their lunch, they couldn’t contain their excitement. Now I rotate these in regularly so that they get to have something a little different every now and then.
They also make the perfect after school snack or light lunch for the whole family. We don’t favor the whole-wheat tortillas called for here so I always just use the traditional flour ones without any issue.
