Fall and winter always meant one thing at my house growing up; time to start the casseroles. My mom wasn’t big on making them during the warmer months because she didn’t want to have the oven going any longer than necessary. So when the crisp air surfaced, I knew I would be welcomed home from school by the smell of a nice, home cooked casserole. My favorite was always broccoli and cheese.
Broccoli was my favorite vegetable and it just goes with cheese. When she added ham and pasta into the mix, I thought it was a miracle food. It was so warm, gooey, and delicious, I couldn’t get enough.
After I went away to college, this was the meal I missed the most. When I finally got my own apartment, I found a similar recipe on Spend with Pennies. I don’t think any cooking will ever be as good as my mom’s, but this is a close second for sure!
