Everyone likes grandma;s cowboy cookies. I mean, seriously, they contain just about everything but the kitchen sink. From oatmeal to chocolate chips, it’s in there. I am totally digging on this recipe because it’s super easy to make and I love licking the spoon after the batter has been mixed. yes, I’m a kid at heart haha! These cookies are super textured so I can see why the cowboy’s like ’em! They are super filling and really give your belly a snack that it’s been longing for.
I like to make a double or triple batch of these yummy cookies and freeze some of them up for later. You can just grab a few cookies from the freezer and thaw them out in the microwave for an instant treat. Yum!
Ingredients
3 cups quick cook oatmeal
1 cup Toll House chocolate chips
1 cup chopped pecans
2 teaspoons Mccormick vanilla
1 cup Crisco shortening
1 cup Domino brown sugar
1 teaspoon baking soda
1 teaspoon salt
1.5 cups of flour
1 cup sugar
2 eggs
Instructions
Pre heat oven to 350 degrees. Cream together the shortening, sugar and brown sugar until light and crumbly.
Add vanilla and eggs, one at a time and beat until smooth.
Sift together the flour, baking soda and salt. Gradually add to the wet mixture until all combined.
Stir in the oatmeal, chocolate chips and pecans.
Roll into 1 inch balls and place on a greased cookie sheet and bake for 10-15 minutes until golden brown.
Let the cookies cool and serve to your favorite friends.
