I look forward to quiet relaxing nights. My ideal type of night is just lounging around the house in a large shirt and yoga pants, with my hair up and my glasses on instead of contact lenses, with a wine glass on my right hand, while eating a simple dinner by the kitchen counter and not at the table. I couldn’t do that during regular days. My friends would visit, bring their kids over to me for me to babysit.
And then I have my work which sometimes brings me outside of the house and even out of town. But whenever I have the night I want, I spoil myself. I make sure I do everything that makes me comfortable.
One thing in my list is to cook something that’s simple yet delicious. Something that wouldn’t push me to slave away for hours in the kitchen. Something that will satisfy my palate as well as my mood.

Quick Tip: Usually when you brown meat in a skillet, little caramelized bits of the meat will cling to the pan. These little nuggets are full of flavor, so ‘deglaze’ the skillet like the fancy chefs do. Add a little liquid to the skillet and stir the bits into a tasty sauce, like in this recipe.
