My husband has one of the toughest jobs on the planet. He works as an over-the-road truck driver. If you don’t know what that is, that means that he drives those big semi trucks that you see on the expressway. He doesn’t just drive them, he hauls things across the country. As a result, he doesn’t get to come home at night…or sometimes for weeks at a time.
When he’s out on the road, there’s one thing he misses, besides me and the kids of course, and that’s homemade foods. All he gets is stuff from restaurants, fast food places, and fuel stations. When I know that he will be arriving to our house soon, I always get these baked pork chops going for him.
The recipe is just like this one from All Recipes. It takes a little bit of time to put these together, but I love putting in my care for a meal that I know he’s going to appreciate. When he gets home, these are waiting and he’s always so grateful.
After he heads back out he will call after just a couple days and say, “Honey, I miss your cookin.”
