It doesn’t matter what season it is, my kids always have some sort of sporting practice or game going on it seems like every day of the week. We usually toss a pizza in the oven from the freezer, grab fast food, or sometimes, if I have an extra minute in the morning, I’ll do a stew or soup in the crock pot. I was tired of the same old thing though and I wanted to feed my family something we hadn’t had in a while.
Of course, my oldest had to be at practice at 5:30 so I had about a half hour between work and getting him to the gym. I remembered this recipe for easy chicken parmesan that I had seen on Spend with Pennies so I did a quick inventory of the kitchen. Lucky for me, we had everything we needed.
I tossed it together quick and dinner was on the table in less than a half hour! My kids, and husband, gobbled it all right up. It felt good running out the door knowing that we had sat down for a nice home cooked meal, even if it was just for a few minutes.
