For almost two years when my daughter was growing up, she wouldn’t eat anything besides macaroni and cheese. Not the good homemade mac and cheese either. All she wanted was the box kind. It was nice, because it was easy to make, but it was so boring! No matter how much I tried to convince her otherwise, she just wouldn’t change her mind. Thankfully, after those two years, she grew out of that phase and started eating normally again.
She went off to college and I missed her so much. When she called and said she was coming home for the weekend, I asked her what she wanted me to make. No surprise, mac and cheese. I said, “Can I make you real mac and cheese?” For the first time ever, she agreed.
I had been holding onto this recipe from Group Recipes for so long and now I had found the perfect time to make it. It came out perfectly, and she loved it. I made a nice big batch of it to take back with her to school. She said she shared with her roommate and it was gone the first day.
