We loved having baked potatoes at our house, especially during the summer months when we can bake them on the grill. They are always so tasty and they make the perfect side dish to just about any entree.
They only thing that I don’t love about baked potatoes, is the work that has to go into them. Not only do you have to wash, wrap, pierce, and season each one, when they are done you have to unwrap, and fix up every one individually.
They are good, don’t get me wrong, but they are a lot of work! When I found this recipe for a baked potato casserole on Group Recipes, I just knew I had to try it out for my family. It looked fairly easy and I knew I already had all of the ingredients.
Let me tell you, this casserole went together quickly and simply, and when it came out of the oven, my family gobbled it right up. It was so nice not to have all the extra wrapping and skins laying around, not to mention the extra dishes! This is how we do baked potatoes now.
