You can make these vegetable patties even lighter, if you choose low-fat cheese. I would imagine these would make pretty awesome veggie burgers – get your favorite store-bought buns or make your own, add some dressing and enjoy!
Feel free to use part zucchini, part potatoes for these. I like to peel the zucchini first if I’m making these for my grandkids – it seems they don’t like seeing “the green bits” in there. I never peel them if I’m making them just for myself, and I also like to add a little bit of garlic!

In a medium bowl, mix together the grated zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Mix until well combined.
Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.
