My best friend growing up living in one of the nicest houses on our block. There’s no wonder that everyone always wanted to spend the night there. She usually picked me to stay when her parents would allow it, because after all, we were besties. My parents never really cared if I went over there either because they were good friends with her parents. That’s really how we met, back when we were in diapers! Crazy I know. One of the things I loved about staying at her house, besides the fact that she had all the most up-to-date video games, toys, and the coolest house…was the fact that her mom could cook!
She went to culinary school for a while before she decided that she wanted to be a stay-at-home mommy…bonus for us! Whenever there was a few of us girls staying there, she would always make up this bacony delicious breakfast casserole for when we finally decided to roll out of bed on a Saturday or Sunday morning.
It tasted like she had worked on it forever, but now that I have found this recipe on Spend With Pennies, I make it for my family, and I’m no expert in the kitchen!
