The Filling In These Egg Rolls Are My Favorite!

Once I got back home, I bought egg roll shells and then all the ingredients necessary to make a really yummy filling.  I got to work on making the best mashed potatoes I had ever made.  I wanted them to be really creamy, full of toasty and really crispy bacon.  Well, I succeeded in that so I knew the egg rolls would turn out really yummy.  I rolled up the egg rolls with the great filling inside and deep fried them until they were golden brown. When I took a bite, I think I went to egg roll heaven.  They were so good!

Ingredients

2 cups prepared (or leftover) mashed potatoes

¼ cup bacon bits or crumbled cooked bacon

2 green onions, thinly sliced

1 egg

½ teaspoon garlic powder

½ teaspoon onion powder

8 sticks of Kraft cheese, approx. 3″ long by ¼” square

8-10 Egg Roll Wrappers             

                          

 

Instructions

Combine cooled mashed potatoes, bacon bits, green onions, egg, onion powder, garlic powder and pepper in a large bowl. Mix until well combined.

Wrap about 3 tablespoons of the mashed potato mixture around each stick of cheese trying to ensure it is completely covered (this helps prevent leaks).

Lay each egg roll wrapper out with a corner pointing towards you. Place your mashed potato and cheese filling in the center of each wrapper. Fold in the sides and roll the wrapper tightly. Use a dab of water to secure the tip of the wrapper. (If you don’t know how to roll an egg roll it usually shows on the package).

Note: It is important to make sure the sides of the wrapper are tucked in holding the ingredients in. If they leak, it can cause splattering.

Preheat oil to 350 degrees. Fry each egg roll for about 4-5 minutes or until browned and crispy.

Serve hot with sour cream for dipping.

My grandmother made this for me when I was a child (less the egg roll wrapper). She was from Ireland and this was a regular type of meal that they would have. Can’t remember the name of it but you know that Ireland is known for their potatoes.

I’ve made these for years. I’m like you don’t remember the name for them. My children would tell me to make plenty of mash potatoes so there would be enough for as they would say for potato patties.

I don’t know why you are calling these egg rolls. I do not doubt they are good if you like mashed potatoes, but just because you roll the potatoes in an egg roll wrapper does not make them egg rolls.

We call them egg rolls because that’s what they’ve always been to us. Feel free to call them something else if you want 🙂

I agree. This is a pierogi. The only difference is that you didn’t bother making your wrappers from scratch -you substituted something ready-made. You wouldn’t call a PB&J a Reuben just because you used rye bread.

Wow…all this ugliness going on in the world is really rubbing off on people!!! WHO CARES what she called them!!! The point is she shared a recipe that she chooses to call potatoe egg rolls. Get over the technicality of what its wrapped in or how that wrapper was made or what you call it! Try the recipe or not, say thank you for sharing something you found delicious and MOVE ON!!!! Mean is NOT OK!!!!

This sounds delicious. I know my family would enjoy this. Only, I might substitute yams for white potatoes, since most of the family likes those better, and are somewhat allergic to while potatoes. Also, has to be dairy free, so I might take the Daiya brand of sliced cheese, put a slice of that on the egg roll wrapper, then add some potatoes, seal good, and fry. Whalah! Well, at least that’s what I would do. so far, haven’t found dairy free cheese sticks.
