Egg rolls have never really been my thing. Maybe it is because I am not a huge fan of Chinese food and it is typically at a Chinese restaurant where you would usually get these. I do not know exactly why, it has just never been my thing. Sometimes I think it is because my parents did not exactly feed us too much Chinese food when we were little, but my siblings and I do not like them. I always found egg rolls to be a little strange when filled with purple cabbage and all that crunchiness. Ugh, just not my thing at all.
However, one night I was staying over at my cousin’s house for a movie night and then a sleepover when we decided it might be fun to go out and pick up some take out. We got a local Chinese restaurant because she said I just HAD to try it and guess what?
It was good! And not only for their Chinese food, but because they put fun twists to their classic dishes. So instead of regular egg rolls, we tried mac and cheese egg rolls and potato egg rolls which got me thinking…I can make this at home!

I wonder how these would make out in an air fryer where no oil is required. anyone tried it yet. They look so good.
My grandmother made this for me when I was a child (less the egg roll wrapper). She was from Ireland and this was a regular type of meal that they would have. Can’t remember the name of it but you know that Ireland is known for their potatoes.
I’ve made these for years. I’m like you don’t remember the name for them. My children would tell me to make plenty of mash potatoes so there would be enough for as they would say for potato patties.

I don’t know why you are calling these egg rolls. I do not doubt they are good if you like mashed potatoes, but just because you roll the potatoes in an egg roll wrapper does not make them egg rolls.
We call them egg rolls because that’s what they’ve always been to us. Feel free to call them something else if you want 🙂

I agree. This is a pierogi. The only difference is that you didn’t bother making your wrappers from scratch -you substituted something ready-made. You wouldn’t call a PB&J a Reuben just because you used rye bread.
Anything wrapped in a wonton wrapper to me is called an eggroll……
Wow…all this ugliness going on in the world is really rubbing off on people!!! WHO CARES what she called them!!! The point is she shared a recipe that she chooses to call potatoe egg rolls. Get over the technicality of what its wrapped in or how that wrapper was made or what you call it! Try the recipe or not, say thank you for sharing something you found delicious and MOVE ON!!!! Mean is NOT OK!!!!
This sounds delicious. I know my family would enjoy this. Only, I might substitute yams for white potatoes, since most of the family likes those better, and are somewhat allergic to while potatoes. Also, has to be dairy free, so I might take the Daiya brand of sliced cheese, put a slice of that on the egg roll wrapper, then add some potatoes, seal good, and fry. Whalah! Well, at least that’s what I would do. so far, haven’t found dairy free cheese sticks.
