Growing up, one of my very first, very best friends, came from a Mexican background. Not that any of that ever really mattered. We were just kids and kids were kids….until we got older. As she started exploring her roots, I was there for the ride. Some of the best experiences were going to see her Dad that lived in a big city a few hours away from our small town. While we were there, he would play traditional Mexican music, do dancing, and of course, make some of the best cuisine!
That was one of my favorite parts of going with her. I knew that we would be eating well that weekend. One of the dishes that I recall as being the most delicious was always served at breakfast time.
They were just like these Mexican breakfast tacos from All Recipes. The first time I took I bite I thought, “Wow! These are spicy!” The more I ate though, the more I loved them. I think that’s where my love for spicy food originated and it has never gone away. I’m perfectly okay with that too!
