As we traveled to New Mexico to see my grandparents, with four screaming, hungry children in the back seat of the van, I thought I was going to lose my mind. I gave Grams a call as we were getting close to see if there was anything she needed.
She said no and I told her we would stop to eat and then be on our way. She said, “Don’t you dare! I have a casserole in the oven.” Oh boy…my kids really don’t like casseroles. I didn’t want to disappoint Grandma though so we didn’t make that fast food pit stop and continued our journey to her driveway.
As we pulled in I was relieved, and worried that my kids were going to go nuts when they saw what we were eating. They didn’t look too pleased when Granny forked this enchilada casserole onto their plates, but they surprisingly gave it a try. I was shocked and proud at how quickly they gobbled it all up.
The recipe, similar to this one from Group Recipes, must have been sent from heaven that day. Now we have it at home all the time and I can finally make one dish to feed my whole family. Hooray!
