I’ll be the first one to tell you, I’ve never been a huge fan of corn, in any form. Creamed corn, canned corn, even corn on the cob…i’ll usually pass on it. I know it’s a little weird, especially considering that I love most all vegetables.
There’s just something about it that I find unappealing…in most cases. The first time my grandpa made me corn casserole, I fell in love. I wasn’t even aware that there was corn in the casserole.
I just thought it was a yummy bread. My mom waited until I was done gobbling down a few portions to let me know that I just ate a bunch of corn. I said, “Hey if you can make it like that, I’ll take it!” This is pretty much the only way I eat corn any more.
I found the recipe for it on Group Recipes and I have made it for my family a dozen times at least. Even my daughter who refuses to eat anything but ketchup and bread will devour her fair share of this casserole.
It’s perfect alongside any main entree or even as a snack!

I brown up ground chuck with taco seasonings, put in bottom of casserole, pour in corn batter, put thin sliced jalapenos on top, bake 350 for 45 mins, test with a toothpick. For my oven it’s an hr and a few minutes . delish
