Down-On-The Farm Meatloaf: It’s Going To Be Nap Time After This Meal!

When in doubt about what to make for dinner, make meatloaf! This wholesome main dish goes great with mashed potatoes, homemade bread or biscuits, and a side of sweet corn. This meatloaf recipe comes with a surprise ingredient that makes all the difference in the flavor!

This is the first time I’ve ever put grated carrots into my meatloaf. When I saw this addition I was a bit leery to give it a try. I thought it’d give the meatloaf a funny taste and texture, but to my surprise, it made the meat even more delicious than usual.

 

Ingredients

2 Eggland’s Best eggs

1/2 cup TruMoo milk

3 slices brown bread crumbled

1/2 cup finely chopped onion

1/2 cup finely shredded raw carrot

2 teaspoons Heinz Worcestershire sauce

2 teaspoons Morton salt

1 teaspoon pepper

1 1/2 pounds lean ground beef

3 tablespoons Domino brown sugar

1 tablespoon McCormick dry mustard

1/4 cup ketchup

Instructions

In a large bowl, beat eggs, add milk, bread, onion, carrots, Worcestershire sauce and salt and pepper.  Mix well until bread is mostly incorporated.

Add ground beef and mix well, making sure all ingredients are evenly distributed.

Pack into a glass or metal loaf pan or pan of your choice.

Mix brown sugar and mustard in a small bowl.

Add ketchup and mix again.

Spread ketchup mixture evenly over the top of the meatloaf.

Bake in preheated 350º F oven for about 1 hour.

Lift loaf out of pan onto serving plate and let stand 10 minutes before slicing and serving.
