Fantastic French Onion Chicken Broccoli Bake

This dish is one of those that you can make in advance and just heat up when you get home.  Or you can prepare it the night before and take it to a party the next day.  It is so delicious, I assure you, you will be the life of the party after you serve it! I am a mega-fan of this casserole because it is insanely easy to throw together and my entire family likes it. my kids don’t even realize there are onions in it because they are hidden in the sauce. Yay!

Today I’m bringing you our new Chicken Broccoli Casserole with French Fried Onions. The French fried onions on top makes this dish a crispy delicious masterpiece!

This recipe has everything you want in it.  Yummy flavors, protein to fill you up and a prep time of less than 30 minutes.  That is the way to go when you are a busy mom or grandma!

 

Ingredients

1 cup uncooked brown rice, cooked according to the package

1 head of broccoli, cooked and drained

½ teaspoon Morton salt (for the cooked broccoli)

1 pound chicken, boneless skinless chicken breasts (2-3 pieces)

2 tablespoons Bertolli olive oil

1 – 10.75 ounce can condensed Campbell’s cream of chicken soup

1 cup milk (approximately ¾ of the soup can)

½ teaspoon pepper

1 cup French fried onions

 

Instructions

Preheat oven to 350 degrees F and grease a 7″ x 11″ baking dish.

Cook the brown rice as directed on the package. *We used minute brown rice.

Cook and drain the broccoli, then sprinkle the salt evenly over it.

Cut the chicken into pieces. In a sauce pan over medium heat, brown and cook the chicken in the olive oil. Remove chicken from pan and set aside.

In the same sauce pan, combine the cream of chicken soup, milk and pepper. Cook and stir over medium heat until smooth and bubbly.

Layering: Spread the brown rice evenly in the bottom of the prepared baking dish. Layer the broccoli, then the chicken pieces. Pour the cream of chicken soup mixture evenly over everything.

Bake in a preheated 350 degrees F oven for 25 minutes.

Sprinkle the French fried onions evenly on top and bake an additional 10-15 minutes (40-45 minutes total), or until the French fried onions are golden brown and crispy.

Quick Tip: Use water instead of chicken broth if you don’t have.
