If there is one thing that I enjoy most about Thanksgiving dinner it would have to be the sweet potato casserole.
When I was growing up my mom didn’t just set out a pot of sweet potatoes with a bit of butter and brown sugar on them. Nope. She blended it all up into a creamy mess and baked it in the oven until we had a glorious sweet potato casserole.
My favorite! My would use lots of brown sugar and butter and her sweet potato casserole always came out divine. This recipe is a little different as it calls for one very special ingredient. Do you want to know what it is? BACON! In the brown sugar mixture, you will also include crumbled bacon. Now, doesn’t that just sound heavenly? My mouth is watering just thinking about it. I made a batch of this casserole the other day with our roasted chicken dinner and my husband and kids devoured it like hungry wolves.

Quick Tip: If you don’t want the topping to be super sweet just cut the brown sugar in half.
