I still remember the very first time my mom made enchiladas. She got the recipe from someone at work and came home so excited to make them. She told us that they were so yummy we would just love them. Well, when you’re ten years old, and an enchilada comes out of the oven, you’re a little skeptical. It doesn’t look like the most appetizing thing ever. She told us to just try a bit.
Of course we were hooked! Mom made them once a week forever. We only had beef at her house though, she wasn’t a fan of chicken.
I made chicken enchiladas for the first time after moving out on my own. Yum! Then I came across this recipe for chicken enchilada soup on Serious Eats. I just had to try it. It was so amazing, and so simple to throw together.
There was no assembly required…that’s always one of my favorite directions! It went over very well at my house, even among the little ones. This is going to be a regular recipe at my table I’m sure!
