This Soup Is Our Secret Weapon Against The Cold Weather
I’m so excited to share my absolute favorite soup recipe with you! I’ve loved this soup ever since I was a kid, and my friends always thought I was crazy.
For some reason they didn’t like spinach at all – I’m pretty sure it was only because they hadn’t tried the right kind of spinach dishes. But the spinach soup my grandmother always made was so amazing, anyone would have loved it. Too bad she never wrote down her recipe but this is how I always make it these days, and it’s pretty darn close to the original!
I used to cook spinach soup, making a roux for it, so that it turned out really thick and almost like a thin gravy. However, I had to find a new way of making it when a friend of mine came over. She has celiac disease and she couldn’t eat anything with a roux made of regular flour.
So I read somewhere that adding some potato would thicken the soup nicely, and it turned out so yummy I’ve been making it this way ever since. I wonder if it was my grandmother’s secret, too?
