My daughter was having a small wedding this past summer. Her and her fiance were going to go up to the courthouse and exchange their vows in front of a few people. Then, she wanted me to make up a nice meal and some cake for those that were witnesses along with a few close friends and family. The food part wasn’t going to be very difficult for me, I knew how to make all of her favorite foods, and her new husband wanted whatever she did…he’s already learning!
The problem came when she asked for carrot cake. That’s what he liked. I had never made a carrot cake before in my entire life…but I wanted to make their wedding day special for both of them. I went on the hunt and found this recipe on All Recipes.
I did a cake testing with just her a few days before the big day and she thought it would be perfect. Her new husband, and our new son, really enjoyed the dessert too…whew! New mom win right here!
