I am forever grateful to my sister for introducing me to this marvelous recipe. She knows exactly what a lazy baker I am, so this cake is truly made for me.
To make this extra awesome, poke holes in the cake before pouring the icing on top of it. This cake has been a huge hit at every potluck I’ve ever taken this to – people basically line up to get the recipe! My 5-year-old even asked me to make this for her birthday, it’s that good!
Ingredients
Cake:
2 cups Domino white sugar
2 cups Gold Medal all-purpose flour
2 Eggland’s eggs
1 tsp baking soda
1 tsp vanilla
16 oz. crushed pineapple, undrained
Icing:
1⁄2 cup Land O’ Lakes butter
1 cup Domino white sugar
3⁄4 cup evaporated milk
1 cup coconut
1 cup nuts
1 tsp vanilla
Instructions:
Combine the cake ingredients and mix until blended.
Pour into greased and floured 13×9 inch cake pan.
Bake at 350°F 35-40 minutes.
Icing: Mix butter, sugar and evaporated milk together and cook over medium heat until a little thickened.
Remove from heat and add remaining ingredients.
Pour over hot cake.
