Doritos Are What’s For Dinner Tonight!

This is a casserole that is fitting for any season. It’s warm and filling making it a nice winter dish, but it can’t also be topped with tons of fresh veggies making it perfect for summer barbecues. I always try and make it a little different each time by swapping out chicken and beef along with various flavors of Doritos and cheese. Make it your own and your guests will love it! Check out what they are saying about this recipe over at Spend with Pennies:

“This casserole was DELICIOUS!!  And yes, it is okay to have Doritos for dinner once in a while, especially in this recipe!!”

I wouldn’t recommend eating Doritos for dinner every night, but it’s okay to have once in a while with this yummy recipe.

Ingredients

1 (family size) bag Doritos
1 onion, diced
1 pound lean ground beef
1 clove garlic, minced
1 cup Chi-Chi’s salsa
1 package low sodium taco seasoning (or homemade taco seasoning)
1 cup Daisy sour cream
1 can Campbell’s cream of chicken or mushroom soup
2 cups shredded cheese, (I used tex mex blend or cheddar)
Optional toppings
Lettuce
Tomato
Olives
Sour Cream

Instructions

Preheat oven to 350 degrees.

Cook ground beef with onion and garlic until no pink remains. Add taco seasoning, salsa and ⅓ cup of water. Cook until thickened, about 5 minutes and remove from heat.

In a large bowl, beef mixture, sour cream, soup and 1 cup of cheese.

Slightly crush Doritos (not completely, you don’t want crumbs). Layer 1½ cups Doritos in the bottom of a 2 qt casserole dish . Top with ½ of the beef mixture. Repeat layers. Finally top with an additional 1 to 1½ cups Doritos and remaining cheese.

Spray a piece of foil with cooking spray and cover casserole.

Bake 30 minutes covered, remove foil and bake uncovered for an additional 20 minutes or until hot and bubbly. Top with lettuce, tomatoes and olives if desired.

Fat is good for you, sugar is what is bad. If you’re looking for healthy foods just try substituting the ingredients you don’t like, with something else. For example, nix the Doritos and use zucchini slices instead.
