I was lucky enough to be born to a father that came from strong Italian roots. What’s so great about that? Besides the abiding love that he has for his family, his ability to cook of course! If you know anything about Italians, you know that they are amazing in the kitchen…secretly I think it’s one of the reasons my mom married him. She knew she wasn’t going to be the one stuck making all the meals.
He was an extremely hard worker outside of the home, so he didn’t always have the ability to get into the kitchen, but when he did, man oh man…could he work some magic! One of my favorite meals that he would make for us was his chicken parmigiana. It was similar to this recipe that I found on Group Recipes.
The chicken was always so juicy and tender and the sauce was good enough to eat plain by the spoonful! I have never found another person that could cook like he can…but this dish comes fairly close. I love making it for my family and sharing something from Grandpa with them.
