I love creamy cookie bars and that is exactly what this recipe is. The caramel and cream cheese in these bars are fantastic! You are really going to enjoy the crust of these bars, too! It’s made from vanilla wafers and pecans. Yum! Now, when I make these bars at home I have to leave the pecans out as my youngest son has a tree nut allergy so I just use more vanilla wafers and all is well with the dessert world.

Oh, I will! Trust me. These caramel cream cheese bars are just what the doctor ordered.
Ingredients
1-1/2 cups crushed vanilla wafers
1/4 cup chopped Fisher pecans
3 tablespoons butter softened
32 ounces cream cheese softened
1 cup granulated sugar
8 ounces sour cream
3 tablespoons unbleached flour
1 tablespoon pure vanilla extract
4 eggs
1/4 cup caramel topping
1/4 cup chopped pecans
Instructions
Preheat 350 degrees
Preheat oven to 325. Prepare a rectangular cake pan with cooking spray then set aside. Combine wafers, 1/4 cup pecans and butter then mix until crumbly then press mixture onto bottom of prepared pans then set aside. In another mixing bowl combine cream cheese, sugar, sour cream, flour, vanilla extract and eggs then mix until smooth then pour over crust in pan. Bake for 45 minutes then cool and refrigerate for hours. Drizzle top with caramel topping and sprinkle with remaining pecans.
